I started exploring Mexican cuisine through the tv shows and books of Rick Bayless (a prominent chef from Chicago) right before giving up nightshades and corn. Needless to say, my continued exposure to Mexican cuisine is very modified, but the slow roasted pork carnitas recipe remains unmodified.
